Ingredients:
- Parmesan cheese, 2 tablespoons
- Divide 1 envelope of ranch salad dressing into two equal parts.
- 1 cup mayonnaise
- 1/2 cup 2% milk
- 1 cup sour cream
- 1/4 cup blue cheese crumbles, optional
- 1 1/4 cups of finely chopped cooked Chicken
- 1 1/4 cups (5 oz.) shredded cheddar-Monterey Jack cheese
- 1/4 cup Buffalo wing sauce
- 1 tube (13.8 oz) refrigerated pizza crust
- Butter, 1 tablespoon, melted
Instructions:
- Pre-heat oven to 400 degrees Fahrenheit.
- Combine 1 teaspoon of the dressing mix with Parmesan in a small bowl. Set aside.
- Mix remaining dressing mixture in another bowl with mayonnaise. If desired, stir in blue cheese and chill until serving.
- Mix the chicken, cheese (Cheddar-Monterey Jack) and wing sauce in a large mixing bowl.
- Unroll the pizza crust and pat it into a rectangle of 14×12 inches on a lightly-floured surface. Cut into 20 squares.
- Place one tablespoon of the chicken mixture at the center of each rectangle. Pull the corners together and seal with a pinch. Place seam-side down, 1 inch apart, on a baking sheet greased. Sprinkle Parmesan mixture on top of melted butter. Brush the tops of the cookies with melted Butter.
- Bake 15-17 minutes, or until golden brown. Serve with dressing.
Notes:
- You can use parchment paper instead of greasing baking sheets to make cleanup easier.
- You can quickly and easily cut the dough into squares using a pizza cutter.
- Although assembling the puffs can be messy, gently lifting the corners while holding the sides helps to enclose filling.
