Where did the year go? It feels like we were just ringing in the New Year, and now it’s time to celebrate again!

If there’s a party happening, you can bet I’ll be making these Mini Cheesy Sausage Bites! They’re the perfect crowd-pleasing snack—savory, cheesy, and irresistibly delicious.

I wanted to create a bite-sized, savory appetizer loaded with melted cheese and flavorful Italian sausage—with just a hint of spice. To take it up a notch, I added some Rotel for an extra kick.

To keep things simple, I use frozen phyllo cups—don’t worry, if I can find them in my local grocery store’s freezer section, so can you!

No phyllo cups on hand? No problem! This cheesy sausage mixture makes an incredible dip. Just serve it warm with your favorite chips for an easy, crowd-pleasing alternative.

These Mini Cheesy Sausage Bites are surprisingly hearty for a bite-sized snack. In fact, after finishing the photos, we ended up having them for lunch!
